Hundreds of thin leaf-like folds stacked like a book — the third stomach. That geometry shreds into a unique chew, and with almost no fat it is the lowest-calorie cut in this atlas. Most often eaten raw with sesame-oil dipping sauce.

Abomasum

The true acid stomach — and nothing like pork makchang, which is the end of the large intestine. A thick wall with fat layered inside: grilled, the outside stays chewy while fat bursts from within. A whole animal yields only about half a kilo.
