Farm income obeys different rules from a salary: most farmers are self-employed, so a year's pay is whatever remains after costs from a revenue line set by weather and world prices. The same farm can clear six figures one year and lose money the next without anyone working less — which is why every figure below is an average across an enormous spread.
The geography is equally stretched. A German or American family farm's income and an Indian agricultural household's income differ by a factor of roughly fifty at market exchange rates — the widest international pay gap of any profession on this site, in an occupation practiced in every country on earth.

Demand for food is not the question — the FAO projects the world will need roughly 50 percent more agricultural output by 2050 than in 2012, driven by population growth and rising incomes. The question is how many farmers that output requires: in industrialized countries, productivity growth keeps cutting farmer numbers even as production rises.
The strongest demand signal is demographic. With the average US farmer at 58, a third of EU farm managers past 65 and Japan's core farmers averaging nearly 68, an unprecedented share of the rich world's farmland will change hands within two decades — a succession gap that governments from Ireland to Japan now subsidize young entrants to fill, and the single biggest opening for newcomers in generations.
Security in the profession follows capital and skill, not headcount. Skilled herd managers, sprayer operators and farm managers are persistently scarce across Europe, North America and Australasia, while low-skill hired labor keeps automating away — and for the world's half-billion smallholders, demand is less the issue than prices, land rights and climate, which will decide whether their children farm at all.
