Korean street food is a tray culture: tteokbokki pots, odeng vats and hotteok presses, paid in cash or by phone tap.

Barbecue rooms are not street stalls, but they use the same shared-centre logic and the same scissors.

Principles

Rice is personal

Each diner has a rice bowl; stews, grills and banchan are shared from the centre.

Steps

01 Sit and banchan

Water, kimchi and three to twelve sides arrive before a proper order is finished.

02 Order a shared centre

A stew, a grill set or a noodle for the table, plus rice if it is not automatic.

03 Manage the grill

Staff may start meat; diners turn and cut with scissors. Over-charring is a common first-timer error.

04 Build ssam

Lettuce or perilla, a swipe of ssamjang, meat, raw garlic or chili, eaten in one bite.

05 Pace soju

Pour for others, especially elders; do not pour a personal shot in isolation if the table is formal.

06 Close with rice or stew

Many tables finish the grill with doenjang jjigae or fried rice on the hot plate.

Hard limits

Sharing assumption

Single-diner portions exist, but many stews and grills are sized for two. Walking in alone at peak barbecue hours can feel awkward.

Chili aftertaste

Gochujang clings. First-timers who order every dish red hit a wall by the third plate.

Smoke and scissors

Self-grill rooms punish hesitation; meat left on a hot plate dries while the table talks.

The hard limit is not spice — it is assuming a one-person steak dinner in a cuisine that prices and plates for the table.
