Culinary talent is skill in turning heat, time and ingredients into food other people can read — flavour, texture, hospitality, cost.

Escoffier’s brigade made the kitchen a school. Julia Child’s TV years made adult beginners visible. Jiro Ono’s counter made repetition famous. Edna Lewis wrote a cuisine that institutions had filed as “home”.
