FFermentation and people

Fermentation ? Microbes turning food into kimchi, doenjang, yoghurt and other living crafts — chemistry plus culture.

Fermented foods can add live microbes and acids. They are not automatically probiotics in the 2001 sense.

Histamine, salt and alcohol are honest downsides for some people. Clinicians handle those.
