Chef in 1651: La Varenne writes down the new French cook
Between the 15th and 18th centuries, European court cooking became conspicuous performance. La Varenne's 1651 cookbook replaced medieval spice-heavy cooking with butter, herbs and reduced sauces; a century and a half later, Marie-Antoine Carême turned dessert into architecture, building sugar-and-pastry centerpieces modeled on real buildings for the tables of Talleyrand, Tsar Alexander I and the future King George IV. Across the Ottoman Empire, the sultan's kitchens at Topkapi had by now grown to feed thousands a day under their own strict hierarchy of ranks — a parallel, unconnected proof that scale always produces structure. The French Revolution abolished the guilds in 1791, freeing cooks who had been legally confined to one trade — roasting, or saucing, or pastry — to combine all of them under one roof: the restaurant, in its modern sense. Auguste Escoffier's 1903 Guide Culinaire then gave that new kind of kitchen a management system, the brigade de cuisine, borrowed from his own military kitchen service. The same decades saw cooking professionalized elsewhere on its own terms — Pellegrino Artusi's 1891 cookbook built a national Italian cuisine out of regional home cooking, and Japan's kitchen-apprenticeship tradition kept training sushi and kaiseki cooks the old way, one rice pot at a time.
How long does it take to become a head chef? Most cooks reach head chef roughly eight to twelve years after their first kitchen job — a few years learning stations as commis and chef de partie, several more running the pass as sous chef. There is no fixed timetable or exam; promotion depends entirely on a head chef judging you ready to run a kitchen.
What is the difference between a chef and a cook? In a professional kitchen, a cook executes a dish; a chef — from the French for "head" — is responsible for the menu, the standards and everyone else's work. Every chef has been a cook, but the title formally means leadership, not just skill at the stove, which is why a brigade has only one chef de cuisine.
It varies enormously by stage and country. Commis and line cooks are among the lowest-paid skilled trades; in the US the median for chefs and head cooks was about $61,000 in 2024. The real money sits with the small minority who become chef-owners or build a restaurant group, where income comes from the business, not a wage.
